Pre heat the oven to 220°C / 200°C fan / gas mark 7. Chop the Potatoes into chunks, dice the Baby Gem Lettuce and prep the Garlic Clove (chop, grate, press). In a bowl mix the Peri Peri Seasoning, Garlic Clove, half the Honey and a drizzle of olive oil. Season with salt and pepper. Add the Chicken Breast and coat in the marinade.

Add the Chicken Breast to a baking tray and add to the middle shelf of the oven. Add the Potatoes onto another baking tray, drizzle with oil and season with salt and pepper. Toss to coat and place on the top shelf of the oven. Cook for 25 - 30 minutes until the Chicken Breast has cooked through.

In a bowl mix a drizzle of olive oil, the rest of the Honey and Cider Vinegar. Season with a little salt and pepper. Mix together well.

Turn the Potatoes over on the baking tray to let them cook all over.

Add the Baby Gem Lettuce and Cherry Tomatoes into the bowl of dressing. Toss the salad until it is fully coated in the dressing.

Share out the Chicken Breast and slice into strips. Add the Potatoes and the side salad and optionally a dollop of Mayonnaise. Eat and enjoy!
